Bootylicious: Part 1

I’m a big fan of butts. Especially when they come from the meat section at Market Basket (arguably the best price I have seen).  I have about 200 recipes highlighting the fantastic nature of pork butts and this post is 201.  The difference here is I am taking it to a new level of no waste recipe.  Part one I am going to tell you how to prepare your pork so you can use it in a variety of ways.  Part 2 is a stock recipe that is knock your socks off. And part 3 is some sauce recipes to jazz up your pork but for any cuisine!

Ingredients:

  • Pork butt (I have half a butt because, I am one person)
  • 1 strip bacon
  • 1/2 white onion
  • 3 gloves garlic
  • 1 teaspoon beef stock (better than bouillon)
  • 1 cup water
  • salt and pepper

How to:

  1. Whenever throwing anything into the crock pot and cooking it forever, it is always good practice to give it a good sear first.  This provides additional flavor.
  2. Sear pork and place into a crock pot. Stab it a few times and insert the garlic cloves into slits you’ve created.
  3. Make the onion into big chunks, and place around the butt.
  4. Add in the beef stock and water. Sprinkle salt and pepper on top. Place bacon on top of butt
  5. Cook on low for 10-13hrs.  I used the juices to baste the pork a few times.
  6. Now your pork is ready for any recipe!
