Fish Tacos with Spicy Cream Sauce and Homemade Tortillas

HAPPY CINCO DE MAYO!!! well… one day late, but this recipe was made yesterday, so it still counts.

I have been trying recently to further my culinary palate, and one type of food that I really have no experience with is fish/seafood.  But with it being cinco de mayo, and me feeling adventurous, I figured why not try!  And let me tell you, as someone who does not like the taste of fish, these were REALLY good.  These are kind of a labor of love, especially with the homemade tortillas, but I made them within a half an hour, so they really aren’t that bad.  There are quite a few parts though, so take what parts you want from this recipe, or use the whole thing, up to your discretion.

Ingredients overall:

  • 1 flounder fillet (bone+skin removed)
  • 1/2 cup milk
  • 1 bunch collard greens
  • 1/2 tomato
  • 1/4 onion (either white or red)
  • tortilla shells (homemade or not)
  • black beans
  • 1 lemon
  • paprika
  • flour
  • milk
  • garlic
  • cayenne pepper
  • salt and pepper
  • chili powder
  • mayo
  • hot sauce

For the fish:

  1. Soak the fish in milk for 1/2 an hour.  This takes out some of that fishy flavor.  You can also add some spices in here to soak into the fish.
  2. Mix 1/4 cup of flour with generous amounts of paprika, pepper, salt, and garlic powder. Then just a pinch of cayenne. Also add in some lemon zest to this mix.
  3. Lightly bread the fish in the flour (it wont stick perfectly, but thats okay, it still makes a really good crust).
  4. In a frying pan add a few tablespoons of vegetable oil.  One hot drop in the fish.  Cook for about 5 minutes on each side until golden/darker.
  5. This is actually the last thing you will do, but its the most exciting so I talked about it first.

Make a quick salsa by adding diced tomato and onion together and then drizzling in lemon juice.

Lastly for the spice cream sauce:

  1. Mix 2 tablespoons mayo with 1/2 tablespoon lemon juice, 1/2 tablespoon chili powder, and several dashes of hot sauce.

Assemble the tortilla, beans, salsa, collard slaw, fish and cream sauce then eat!
