Drunk In Love

Valentines day may be over, but don’t you want to be in love every day?  Once you have these cupcakes you will be in love.  Best part?  This recipe makes cupcakes for two.  So you don’t need to make a dozen cupcakes and be tempted for a week afterwards. This recipe is a simple vanilla cupcake, with drunken red wine cherry compote, and instead of frosting (because this cupcake doesn’t really need it) I used some powdered sugar and chocolate shavings.  It is the perfect cupcake to share with your love.

BETTER PART? Recipe testing is hard, especially when making sweets, so if you have a few bucks to spare, the second cupcake is all yours!! (others available for purchase upon request)

Ingredients:

For the cupcakes:

  • 1 egg white
  • 2 tablespoons sugar
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla
  • 1/4 cup flour
  • 1/4 teaspoon baking powder
  • pinch sugar
  • 2 cupcake liners
  • 1 sprinkle powdered sugar
  • 1 sprinkle shaved dark chocolate

For the compote:

  • 2 cups chopped cherries
  • 1/3 cup red wine (any kind is fine)
  • 2 tablespoons sugar
  • 1/4 cup water (added periodically)

How to:

  1. Let’s start with the compote.  Add the cherries, wine, and sugar to a sauce pan and set onto low heat.  Stirring occasionally let this reduce for 10 minutes.
  2. When the level of liquid gets low, add water 2 tablespoons at a time to the pan, until the cherries are tender and there is remaining liquid.  Using a food processor, gently chop the cherry mixture for a few pulses. Set aside to cool.
  3. Now for the cup cake.  Mix the egg white and sugar together.  Then add butter and vanilla.  Stir to incorporate.
  4. Slowly add in your flour and then baking powder.
  5. Split between two cupcake liners and bake for 12 minutes at 350.
  6. Let cool completely.
  7. Then gently make a little well in the middle of your cupcake.  Add in some compote.  Sprinkle with powdered sugar and chocolate shavings and enjoy!
  8. This would go great for a girls wine night in, date night, or any day of the week!
