It is a proven fact that a LOT of chocolate is going to be eaten today, and a lot of diets are going to start monday. But I made this recipe to be a sweet treat that wont ruin your diet plans but also still satisfies that sweet tooth. This is also a great recipe for anyone with allergies because it is dairy free and dairy free. Make it for today, or the rest of the year, because you wont feel guilty enjoying this.
- 1 cup coconut
- 1/4 cup almonds
- 1 tablespoon honey
- 3 whole dates
- 2 “squares” of lindt dark chocolate
- 2 teaspoons lemon juice
- Place the coconut, almonds, and dates in a food processor. Plus several times until the dates and almonds are in minced or smaller pieces.
- Add in the honey, lemon juice, and chocolate and then pulse a few times to incorporate.
- Roll the dough into small nickel sized balls and then roll in excess coconut. Then freeze and enjoy cold.
