Lazy Man’s Lunch

Looking to clear some space in the fridge? Here’s two simple sandwich recipes for using up that leftover chicken.

The Spicy Way:


  • cooked chicken (crispy, baked, any kind you have available)
  • lettuce
  • 2 tablespoons of hot/buffalo sauce
  • 1 tablespoon of blue cheese dressing
  • 1/2 tablespoon of mayo
  • provolone cheese
  • roll, flour tortilla, or white bread

How To:

  1. Slice cooked chicken
  2. Lightly toast the bread/roll. If using a tortilla, microwave it for 15 seconds until soft.
  3. To create the sauce: whisk together blue cheese, mayo and hot sauce until smooth and orange.
  4. Assemble the sandwich with lettuce, chicken, cheese, and then dressing over the top
  5. Enjoy your quick lunch!


The Herb-y Way:


  • cooked chicken
  • lettuce
  • white onion
  • cheese
  • mayo
  • balsamic or Italian dressing (my half and half recipe would be a fitting substitute)
  • bread of your choosing

How To:

  1. Toast bread
  2. Slice chicken
  3. Slice up some white onion and lettuce
  4. Spread mayo over top piece of bread then drizzle with dressing
  5. Assemble the rest of the ingredients

And your lazy man’s lunch is complete. Enjoy.

    ohhhh.. i usually just bring like a plain pb&j to lunch but i am going to try this tommorrow! do you think the bread will get all soggy if i make it over night? perhaps the best way to go is to just skip the dressing but i’d hate to loose all that spicy zest!!
